Pickled Beets with a Sweet and Spiced Vinegar Brine

These beautiful purple pickles are tangy and sweet, with an intriguing bit of spice and a hint of crunch. Sweet and aromatic, they are low on salt but still full of flavor.

This simple and easy recipe makes a colorful side dish that the whole family can enjoy. The combination of fresh beets, vinegar, sugar, cloves, and allspice creates a balanced pickle with a bright flavor and a touch of warmth.

## Ingredients

– 8 medium fresh beets
– 1 cup vinegar
– 1/2 cup sugar
– 1-1/2 teaspoons whole cloves
– 1-1/2 teaspoons whole allspice
– 1/2 teaspoon salt

## Instructions

Scrub the beets and trim the tops to 1 inch. Place the beets in a Dutch oven and add enough water to cover them. Bring the water to a boil, then reduce the heat and simmer, covered, for 25-30 minutes or until the beets are tender.

Remove the beets from the water and allow them to cool. Peel the beets, slice them, and place them in a bowl. Set aside.

In a small saucepan, combine the vinegar, sugar, cloves, allspice, and salt. Bring the mixture to a boil and boil for 5 minutes.

Pour the hot vinegar mixture over the prepared beets. Refrigerate for at least 1 hour before serving.

Drain before serving.
