Mexican-Style Cheesy Beef Casserole

Ingredients

  • 1 pound ground beef
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 can black beans, drained and rinsed
  • 1 can corn kernels, drained
  • 1 can diced tomatoes
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 2 cups shredded cheddar cheese
  • 2 cups tortilla chips, crushed
  • Fresh cilantro for garnish
  • Sour cream and salsa for serving

Directions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, cook the ground beef over medium heat until browned. Add the onion, garlic, and red bell pepper, and cook until the vegetables are soft.
  3. Stir in the black beans, corn, diced tomatoes, chili powder, cumin, salt, and pepper. Cook for an additional 5 minutes to allow the flavors to meld together.
  4. In a greased baking dish, layer half of the beef mixture, followed by a layer of crushed tortilla chips and half of the shredded cheddar cheese. Repeat the layers.
  5. Cover the dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
  6. Garnish with fresh cilantro and serve hot with sour cream and salsa on the side.
