Ingredients
- 1 pound ground beef
- 1 onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 can black beans, drained and rinsed
- 1 can corn kernels, drained
- 1 can diced tomatoes
- 1 tablespoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- 2 cups shredded cheddar cheese
- 2 cups tortilla chips, crushed
- Fresh cilantro for garnish
- Sour cream and salsa for serving
Directions
- Preheat your oven to 375°F (190°C).
- In a large skillet, cook the ground beef over medium heat until browned. Add the onion, garlic, and red bell pepper, and cook until the vegetables are soft.
- Stir in the black beans, corn, diced tomatoes, chili powder, cumin, salt, and pepper. Cook for an additional 5 minutes to allow the flavors to meld together.
- In a greased baking dish, layer half of the beef mixture, followed by a layer of crushed tortilla chips and half of the shredded cheddar cheese. Repeat the layers.
- Cover the dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
- Garnish with fresh cilantro and serve hot with sour cream and salsa on the side.
